So I'm just covering all my bases and building up my relationships with all of them just in case. Adeline

Birthday: Winter 18
Adeline is one of the two noble siblings, sister to Eiland, and takes charge of Mistria's administration. She is organized, direct, and friendly. Her storyline is all about how she needs to relax.
Loved gifts: Coffee, gazpacho, lemon pie, middlemist, mistril ingot, peaches and cream, perfect pink diamond, plum blossom, pumpkin pie, tea with lemon

The easiest birthday present for Adeline is coffee, which you can buy from Darcy at the saturday market for just 100 tesserae. It's easier to just grab a hot cup of coffee the Saturday before her birthday and hang onto it. If Darcy isn't selling it that day, go for tea with lemon or pumpkin pie instead. Peaches and cream was my go-to gift for Adeline later on because it's an easy recipe (peaches, sugar, milk) which you'll gain after selling at least one peach in summer and may have ingredients on hand for.
Balor

Birthday: Summer 10
Balor is a merchant who brings goods into Mistria and is confident and flirtatious. His storyline is about his instinct to lookout only for himself versus his growing loyalty to Mistria.

The easiest birthday present for Balor is a ruby. You can find these in the upper levels (1-20) of the mines by mining ruby nodes. The perfect ones are more rare, of course, but I found and sold several of these within my first season, so you should have at least one tucked away by Summer without trouble. If you're really in a pinch though, just give him a regular ruby for his birthday and tell him you were pressed for time.
Celine

Birthday: Summer 14
Celine is daughter of the general store owners Holt and Nora, and works as a gardener. She is friendly but a little shy. Her storyline is about finding someone to share her interests with while uncovering the secrets of an ancient flower.

The easiest birthday gift for Celine is a hydrangea flower. Thank goodness this girl is so easy to please. Hydrangeas are one of her loved gifts and they can be foraged in the same season as her birthday. Even if you forget about her birthday until the day of, you should have no trouble running out to the forest east of town and snagging one off a bush.

Eiland

Birthday: Summer 20
Eiland is one of Mistria's nobles, Adeline's brother. He's friendly, outgoing, and very interested in archaeology. His story is about hunting for the lost pieces of an ancient set of armor.
Loved gifts: Chocolate cake, coconut cream pie, glowberry cookies, golden cheesecake, golden cookies, ice cream sundae, mont blanc, pumpkin pie, spell fruit parfait, strawberry shortcake, void cake

The easiest birthday gift for Eiland is chocolate cake. Eiland loves sweets, but most of his loved gifts are a pain to make until you've invested in upgrading your kitchen. You should be able to save up for a tier two kitchen (from the carpenter) and buy a chocolate cake recipe (from Darcy at the Saturday Market) before his birthday. As long as you've got an egg, you just need to pick up chocolate, sugar, and flour from the general store. Failing that, caramel candy is a default recipe that's very easy to make in a pinch with just sugar and butter from the general store.
Hayden

Birthday: Winter 8
Hayden is owner of Sweetwater Farm in Mistria, has a pet chicken named Henrietta, and is both earnest and friendly. His storyline is sort of an allusion to being a "single dad" of sorts raising Henrietta.

The easiest birthday gift for Hayden is a golden egg. I'm shocked that Hayden has even more premium taste than Eiland but here we are. He's very easy to give regular dairy product gifts to year round but his loved gifts are all golden varieties. His birthday isn't until winter, so if you've got at least one chicken or cow and have been dilligently petting them daily to improve their hearts, you should be producing golden eggs or golden milk by then. If not though, he'll still appreciate the normal milk and eggs.
Juniper

Birthday: Fall 26
Juniper is owner of the bathhouse in Mistria. She has a pet dog named Dozy, and is a bit snobbish, looking down on life in a small town. Her story is about uncovering the magic that drew her to Mistria.

The easiest birthday gift for Juniper is wine. It's the quickest thing to get your hands on any day of the week at the inn. The rest of her liked and loved gifts rely on luck and foraging. If you ever spot a mushroom brew tea at Darcy's stall or Balor's cart, snag it and tuck it away for Juniper's birthday.
March

Birthday: Spring 16
March is a blacksmith with his brother Olric and is initially very standoffish and dismissive. His story is about learning to trust people to be there when he needs help most.

The easiest birthday gift for March is perfect copper ore. You might be slightly hard-pressed to find one by his birthday in the second week of spring in your first year, but since you can find them in the upper mines levels (1-20), it's more achievable than his other loved gifts. Barring that, you can give him a regular copper ore instead. He probably doesn't like you that much yet anyway so anything is an improvement!
Reina

Birthday: Fall 12
Reina is the cook at the inn, owned by her parents Hemlock and Josephine and is very friendly and generous. Her story is about finding her identity as a chef and representing Mistria.
Loved gifts: Apple honey curry, breaded catfish, cabbage slaw, ice cream sundae, incredibly hot pot, rosemary garlic noodles, seafood boil, seafood snow pea noodles, spell fruit parfait, sushi platter

The easiest birthday gift for Reina is cabbage slaw. Like Eiland, Reina mostly loves food. Luckily, the cabbage slaw recipe is easy to earn and cheap to make as long as you've saved some spring ingredients. You'll get the recipe after you ship just one cabbage in the spring, and cooking it requires one cabbage and one fennel, which is foraged in spring. If you didn't plan that far ahead you can forage some garlic in fall, which is on her liked gifts list.
Ryis

Birthday: Spring 4
Ryis is a carpenter in Mistria with his uncle Landen and is both confident and friendly. His story is about learning to feel at home in Mistria after moving away from his family in the city.
Loved gifts: Golden bristle, golden bull horn, golden cheesecake, golden cookies, golden duck feather, golden horse hair, golden feather, hard wood, lobster roll, veggie sub sandwich

The easiest birthday gift for Ryis is hard wood—and I don't want to hear you making jokes about it! Ryis has a very early birthday, so getting him the best gift is tricky, not least because everything else on his loved gifts list is unattainable until much later. In year 1, you probably won't even have a copper axe to harvest hard wood yet (but well done if you do). In year 1, you may have to settle for giving him a regular piece of wood or stone. If you're feeling romantic, you could forage a lilac for him, which he also likes.
Valen

Birthday: Fall 1
Valen is the town doctor in Mistria and is friendly but also calm and reserved. Her story is about the hunt for an ingredient to recreate a healing panacea.
Loved gifts: Beet salad, beet soup, beet, deep sea soup, dragon scale, harvest plate, rosemary garlic noodles, summer salad, sushi platter, vegetable soup
Easiest gifts: Dandelion, garlic

The easiest birthday gift for Valen is a a beet. She really likes beets. The trouble is, beets grow in winter and Valen's birthday is on Fall 1, so this won't work in your first year unless you happen to have bought one from Balor's cart. A year 1 alternative is the vegetable soup, which you can get the recipe for from attending Josephine's cooking class on the request board in spring. You'll need a potato grown in spring and a tomato and basil from summer, which is all attainable in time for her birthday so long as you've reached at least cooking level 16. If you aren't quite that prepared, you can forage some garlic for her on the first day of fall.
Mistria's secret marriage candidates
Secret candidate spoilers below!
Fields of Mistria has two marriage candidates that players refer to as the "secret bachelor" and "secret bachelorette" because their identities are spoilers for parts of the main story. The secret bachelor becomes available after breaking the fire seal on level 60 of the mines and the secret bachelorette becomes available after breaking the final seal on level 100 of the mines.

Caldarus

Birthday: Spring 25
The dragon statue on your farm Caldarus gains a mortal form to protect you when you break a magical seal in the mines. He's a gentle and curious soul whose personal story is about learning to inhabit his mortal emotions. Also, he loves cooking... badly.
Loved gifts: Apple honey curry, fried rice, harvest plate, mont blanc, seafood boil, seafood snow pea noodles, statuette of caldarus, sushi platter, veggie sub sandwich
Easiest gifts: Marigold, chocolate cake
Best birthday gift: Fried rice
The easiest birthday gift for Caldarus is fried rice. By the time you unlock Caldarus you may have the kitchen upgrades and recipes to cook him up a few of his loved dishes. In my experience though, having unlocked the "Living off the Land" tier 3 cooking perk that sometimes gives a cooked dish when harvesting a related crop, I was swimming in fried rice every spring. Plant a bunch of peas and you're pretty much guaranteed to be flush with fried rice too because there are only three cooked dishes in the game that use peas as an ingredient and can be dropped by that skill when harvesting them. Otherwise, he likes marigolds and there's one growing outside his temple in all seasons for you to pluck and give to him.
Seridia

Birthday: Winter 2
Formerlly masquerading as the dragon priestess, known as the Witch Queen, Seridia joins Mistria after you break the final magical seal in the mines.
Loved gifts: Dragon pact tablet, dragon-forged core, dragon-forged fang, dragon-forged horn, dragon-forged powder, hardened essence, monster mash, perfect mistril ore, spell fruit parfait, unknown dragon statuette
Easiest gifts: Monster block, monster powder, pink diamond, plum blossom

The easiest birthday gift for Seridia is a perfect mistril ore. To reach the point of unlocking Seridia you'll have already spent a lot of time grinding for resources in the lower levels of the mines. You should likely have a perfect mistril ore on hand after all that. If not, pick a plum blossom from the trees outside her temple in the western ruins. They grow during winter so you should be able to snag one on your way in to see her on Winter 2.
