It's not uncommon for mages to do the tailoring/enchanting combo. Personally went for engineering for no other reason than that it's pretty awesome.

Ignore him. Engineering is a total gold sink. You will not make any money out of it (except maybe the cogs). It does have it's use, but not as a gold maker.
IMO, gathering proffs have always been the best gold earners, with JC being pretty good but a pig to level. Alchemy is also pretty good.
If I were starting out today I would probably pick up mining and herbing. Not only will you get a lot of gold this way, you are also getting xp for each node you gather from.
You could also go herbing and alchemy, or mining and JC, as they complement each other. But it would mean that you would have to use what you gather to skill up alchemy/JC, which would mean losing out on the gold from just going gathering.

You'd be better off choosing two gathering professions , eg herbalism and mining or skinning. Once you have enough gold you can then swap professions if you like.
I wouldn't recommend Engineering as a profitable skill but it is a fun profession.
Check out this site for general advice on professions and here for a more in depth guide. The latter has advice on using add-ons to enhance your Auction House experience if you get the gold goblin bug.

But if you decide to stick to two gathering professions then the plain vanilla auction house is fine.

Edit: Ninja'd!

I never claimed engineering was a money maker, I claimed that it's awesome, and I stand by it!
